Common Terms Related to Bakeries
Fresh bread, hot rolls, gooey cookies and decadent cakes are the delicious output of bakeries, be they small corner shops or large commercial producers. Here are some terms for the different types of products you can expect to find in a bakery:

Fondant: An icing-like confection made from sugar, corn syrup and water. It is often used in wedding cakes or specialty cakes as either a filling or a frosting. It has a soft and pliable consistency that can be molded into different decorative shapes.

Brioche: A rich yeast bread made with a high concentration of eggs and butter.

Baguette: A thin, long loaf of yeast risen, crisp crusted bread. In France, baguettes are legally required to contain no preservatives.

Boule: A round loaf of white or sourdough bread. It is considered the traditional French bread shape.

Beignet: Deep fried dough typically dusted with confectioner's sugar. The pastry originated in France and was usually served filled with fruit jam. Beignets are the state doughnut of Louisiana and are commonly served in cafés in New Orleans.

Croissant: A pastry made with yeast dough folded over a nearly equal proportion of butter. The finished pastry is then typically formed into a crescent shape. The layers of butter interspersed with the dough create the flakiness associated with croissants.

Pain au Chocolate: Croissants with a chocolate filling.

Eclair: A rich, oblong pastry filled with either custard or cream and topped with chocolate ganache. The pastry dough is called a choux, which is cooked in a saucepan before baking. The resulting pastry is hollow, making it easy to fill.

    For dieters or allergy sufferers, many bakeries make gluten-free products. If they are not labeled accordingly or you’re unsure, it’s good to ask beforehand.

  • What is your most popular cake recipe?
    One theory behind certain recipes being popular at certain bakeries is that it’s the best dessert available on the menu. If you’re stuck on picking out a flavor, it’s a good idea to ask what others are buying the most to get a feel for what they’re good at doing.

  • Do you take special orders for cakes? What options are available?
    Your standard supermarket bakery will ice a message on a cake. Big deal. Authentic, gourmet bakeries are usually capable of going beyond the call of writing a happy birthday message. Inquire about fondants and specially-shaped cakes to fit an occasion as well as how much it would cost.
