Tips on Selecting Quality Seafood
Seafood is truly the last wild food supply left in the world. Use these tips to help select high quality seafood from your local fish market or grocer.

Tip #1: Be picky when selecting fresh fish
Eating freshly caught shrimp at an oceanside restaurant is truly one of life's greatest pleasures. However, not everyone is able to live by the coast and enjoy fresh seafood, but because of remarkable innovations in shipping, seafood can still be enjoyed even if you live far inland. Some species, such as lobster, are often kept alive in the store until they are sold. Other species, like salmon and tuna, are kept frozen or on ice, since they are highly perishable. Fresh fish is brightly colored without a heavy odor. If it is being sold whole, then the eyes should not be sunken into the head.

Tip#2: Use steak cuts for grilling
Select the proper cut of fish when cooking. The steak cut, sometimes called the darne cut, is a round or horseshoe-shaped cut. It includes both the meat and the bone structure of the fish. It is best used on the grill. However, other cuts, like the fillet cut, do not include the bone structure. A fillet cut, therefore, should not be used on the grill, as the meat might fall apart. Use fillet cuts for broiling or searing in a pan.

Tip#3: Buying farmed fish can save money
Today there are many successful fish farms that sell everything from oysters to salmon. While buying wild caught Alaskan salmon will command top market prices, selecting farm raised salmon is a cheaper option. Truthfully, there is hardly a taste difference between the two once they are cooked.
