Questions to Ask a Barbecue Catering Company

Barbecue ribs, split roasted chicken, tri tip sandwiches, beef briskets and whole pigs are some of the hallmarks of BBQ cooking, which is a popular and festive catering theme in the summer. You can opt for a Western barbecue with platters of fried chicken and potato salad, or throw a Southern fish fry with a buffet of shrimp and grits, crab cakes and hush puppies. Whatever your flavor, be sure to ask these questions when looking for a caterer.

  • Will you grill the food onsite?
The smell of grilled meat can add a real festive element to your outdoor party. You may not want food cooked onsite at an indoor event, though, such as a wedding.

  • Do you have a banquet center?
If you want a place to hold your event, look into restaurants that also cater and have banquet rooms. This option eliminates the hassle of cleaning.

  • Can I take home the leftovers?
Half the fun of barbecuing is having leftover BBQ chicken and lamb chops to enjoy. Find out if you’ll be able to take leftovers home.

  • Do you provide taste tests?
Ask about coming in to sample menu items. Some companies require you to have a minimum amount of guests for complimentary tastings.

  • What administrative fee should I expect to pay?
Catering companies charge a percentage-based administrative fee to pay for delivery cost, wear on equipment, staff and other overhead.

  • Will you draw up a written proposal?
After you decide on menu options and guest count, a caterer should provide you with a proposal that includes the cost of food, equipment rental and other charges.

"I recently went to Uncle Buck's on a visit to Shreveport, my place of birth. I live in California and was home tending to rental property when a relative recommended the BBQ at Uncle Buck's on Jewella Ave. He stated they were comparable to his BBQ and he is a darn good cook on the grill. I ordered a Rib plate and the food was good. But, they only gave me potato salad and baked beans as side orders ..."

Barbecue restaurants and caterers have to hire servers and cooks to provide customers with delicious recipes and great service. They also need managers to book events, make sure customers are satisfied, and find low-cost wholesalers for chicken, beef, pork, and fish options.

The chefs are some of the most important employees at the barbecue food and catering restaurants because they prepare all of the recipes that are found on the menu. Grilling might seem simple to those who have not done it on a large scale before, but chefs need a lot of experience to make a wide variety of recipes. Some offerings may include burgers, sandwiches, braised vegetables, and smoked tri-tips.

Many barbecue food and catering restaurants also make their own marinades and rubs. Therefore, the cooks also need to know how to make these products to give their beef, chicken, and other meats a unique flavor in combination with the charcoal and smoke cooking methods.

Servers make sure that diners and catering clients get all of the services that they need. Those who work for caterers often need clean driving records to transport all of the sauces, sandwiches, and grilled meats to the party or event.

Managers often work behind the scenes to ensure that the operation runs smoothly. This requires finding wholesalers that will give them good prices on a broad range of products, such as smoke pits and fresh ribs. They also address customer complaints and usually have the authority to reduce prices or provide free food from the menu to appease clients who have had bad experiences.
