Questions to Ask At Steak Houses

Whether it’s a chain or a local establishment, if you are looking for a good cut of beef, there is bound to be a steak house near you. Here are some questions to ask before booking the restaurant.

  • What is your selection of beef cuts?
    If you need to reserve a fine dining restaurant for a corporate event, intimate wedding reception or other meeting, they should offer a good selection of cuts to satisfy all your attendees. For example, filet mignon is popular, while others may choose something larger like a porterhouse or t-bone.

  • Do you offer home delivery?
    It isn’t that usual for a steak house to offer home delivery, but some might, especially in larger cities. Most will, however, offer to box up your meal for pick-up.

  • Do you also serve seafood?
    If there are some in your dining party that do not eat beef, you’ll need to find a chophouse that also serves seafood. Luckily this is fairly common, with many establishments offering items such as lobster, shrimp or even fish for those that don't eat meat.

  • How long is your beef aged and using what method?
    Aging enhances taste and many fine chophouses obtain beef that has been dry-aged, meaning that it is hung in a temperature and humidity controlled environment for two to four weeks. Wet aging is when the meat is vacuum-packed and allowed to soak in its own juices, which is cheaper but gives a somewhat less distinctive flavor than dry aging. If you have a preference on taste, you should ask before ordering.

    Like other restaurants, steak houses hire chefs and waiters. Wait staff tend to be better paid in fine dining establishments, whilst chains are typical for casual dining and moderate priced restaurants. Many high end steak houses hire a specialist sommelier.

    Steak house chefs are expected to be experts in cooking all of the various cuts. Sauces are also extremely important, as are marinades. Most steak is grilled. The preparation requirements of different cuts are different, with tri-tip requiring very different techniques from ribs. Some restaurants also sell fish and seafood, and seafood is common in appetizers. Side dishes may include various vegetables. Chefs are also responsible for selecting beef and ensuring it is of true prime quality.

    Wait staff need to be equipped to explain to customers, often wealthy ones in fine dining establishments, what the various cuts are. The difference between porterhouse and t-bone, for example, can be less than immediately obvious. The menu is also likely to include filet mignon, sirloin and tenderloin. Almost all of the entrées offered are likely to focus on steak and sauce, and side dishes are often extra at gourmet steak houses. Chains tend to offer standard combinations. As high end restaurants attract those celebrating special occasions, wait staff need to be aware of that and willing to offer suggestions. Sommeliers, of course, offer advice on wine and specific pairings.

    Unlike many restaurants, steak houses tend to open only for dinner. Delivery is rarely offered, and when it is it is through a service, so delivery drivers are almost never required. However, most steak houses do sell gift certificates.

    Steak houses remain popular, especially amongst those better paid. Chains offer an alternative to the less well heeled that can be almost as good.
