Cafes

Operating a café is similar to operating a restaurant. However, most cafés do not provide waitress service. Cafés hire cooks and kitchen staff as well as baristas. Those that also sell wine and other alcohol may or may not have a specialist bartender. Often cafés open early in the day to facilitate breakfast and their busiest time tends to be lunch.

The chef at a café has to devote time to putting together menus, although he may not have to worry about dinner. In some cafés brunch is a buffet. However, café owners and employees need to be highly knowledgeable about gourmet coffees and teas, including Italian coffee, and about specialties such as French and Italian desserts. Even a café often has different menus for breakfast, lunch and dinner, and may offer more substantial food for the latter. Bistros tend to provide more solid options for diners.

Cafés have to worry about meeting the same food safety requirements as restaurants, especially if they sell hot food. They may also need to obtain a liquor license. Cleanliness is important in all food service establishments. As most food is sold to diners within the cafe, employees need to keep the cafe area and outdoor seating and tables clean.

If the café also offers convenient catering, then they will need delivery drivers. These drivers, and café employees in general may be required to work holidays. As catering is most often desired by customers who have a special event or occasion to honor, it becomes very important for everyone involved to get things right. A wedding brunch can make or break a couple's big day.

Cafés fill two important roles, the first to provide relaxing casual dining for people who need only a light meal in a good atmosphere. The second is in the area of catering events.
