The following are some delicious terms relating to chocolate and cocoa:

Cacao: The cacao is a tropical tree that grows the beans that are used in chocolate making. The term cacao can also refer simply to the dried and partially fermented beans that the tree produces.

Chocolate Liquor: Chocolate liquor is produced by grinding up the center, or nib, of a cocoa bean. Despite its name, this liquid is not alcoholic.

Dutch Process: The Dutch process is a method of treating cocoa that makes the resulting chocolate taste less acidic. This is accomplished by using an alkaline solution on the cocoa solids before they are made into cocoa powder.

Fat Bloom: A fat bloom is an aesthetic imperfection of chocolate that occurs when the substance is not properly tempered or when the chocolate is exposed to unsatisfactory temperatures. A white film will form on the chocolate, and it may become soft and crumbly. This chocolate is still edible.

Ganache: Ganache is a popular product that is made from chocolate and cream. A box of chocolates will usually contain truffles with a ganache filling, and it can also be used as a liquid to glaze cakes and other desserts.

Sugar Bloom: A sugar bloom is an aesthetic imperfection of chocolate that occurs when moisture collects on the surface of the chocolate and causes the present sugar to recrystallize. A white film will form on the chocolate, and it may become firm and dry. This chocolate is still edible.

Tempering: Tempering is a preparation process. The chocolate is carefully heated and cooled to encourage crystallization. Tempering is used when chocolate is to be used in a liquid state for dipping or coating. If chocolate is not tempered properly, fat bloom will result.

White Chocolate: Despite its very different appearance, white chocolate is still chocolate. Like milk chocolate, white chocolate contains milk solids and sugar. Unlike other chocolates, white chocolate uses only cacao butter. Vanilla or other flavoring is often added.

Chocolate production in the United States alone is an eighteen billion dollar per year business, which makes chocolate and cocoa suppliers and distributors a major industry in the United States and worldwide.

Chocolate providers sell products to restaurants, bakeries, and confectionery shops. Then they offer the products directly to individual consumers. These products represent every possible form of processed chocolate and cocoa. They sell milk chocolate, which contains milk solids in addition to sugar and cocoa butter and cocoa solids, to unsweetened, sugar free cocoa powder and bars. Dark chocolate also has sugar, but is not combined with milk powder or milk solids. Sugar-free cocoa powder and cooking chocolate are used for baking and other methods of cooking. This provides a richer chocolate flavor than chocolate which is mixed with milk and other ingredients, although those ingredients can reduce the bitterness found in raw cocoa.

Consumers are given many choices when it comes to finding chocolate for themselves or to use as a gift for Valentine's Day or another holiday. They can choose from boxed chocolate, like truffles, or candy bars and other candies created from pouring melted chocolate into a mold.

Food companies get feedback from consumers, restaurants, bakers, chefs and distributors to provide the finest gourmet products possible. In response to consumer demands, more businesses are creating gourmet, handmade chocolates and desserts.
