Tips for Buying the Best Fish and Seafood
A diet rich in omega-3 acids is tremendously beneficial to heart health, and salmon, tuna, herring and other types of seafood are particularly rich in these types of essential fatty acids. When choosing fish from a local fish market, remember a few tips that will ensure that you purchase the very highest quality.

Buy the Best Whole Fish:
If buying a whole fish, look for bright eyes and tight scales. The gills will be tight and bright red. There will be no fishy smell; truly fresh fish smells of the ocean.

Find the Freshest Fish Fillets:
If buying a fish fillet, look for clear flesh, with no gaps between the skin and muscle. It should appear moist and bright. If you press the flesh, it should spring back when released. There should be no fluid accumulated on the surface. Again, there will be no fishy smell.

Buy Tasty Molluscs:
Oysters, clams and mussels should be closed tightly. If they are open, tap them lightly on a hard surface. If they are alive, they will close on their own.

Choose Fresh Shellfish:
Fresh shellfish such as crabs and lobsters should be purchased alive. However many fish markets sell lobster and crabs that have been recently cooked, to avoid the mess and hassle when you bring home these types of seafood.

Pick Newly Caught Shrimp:
Fresh shrimp should have clear shells, with no black spots or yellow tinge. Shrimp should smell briny. If the shrimp smells of ammonia, then it has likely been washed in chlorine to disguise its age. You can purchase shrimp where the shell and veins have both been removed.

Always Ask Questions:
Ask your fish market expert about the origins of the fish; if they are wild or farm raised, where they were caught, and what method was used to catch them.

Consider Frozen Seafood Options
If you live inland or far from a legitimate source of fresh seafood, then opt for frozen. Fish that has been quickly frozen after being caught is fresher than fish that has been shipped hundreds of miles or has been sitting at the market for days.

Fish and seafood markets rely on the skills of several different types of employees to make sure their customers can order the types of food that they want. These customers might include individuals preparing dinner on a regular basis or even restaurants that place large orders every day, so it is important for the retailers to keep their customers happy by supplying them with fresh salmon, lobster, shrimp, crab, and other foods.

Retailers often buy their seafood from wholesale companies that have direct contact with fishermen. This means that they need employees to order the mussels, shellfish, and freshwater fish. The person ordering the food needs to know the difference between mahi mahi, halibut, cod, salmon, and other foods. They also need to know how to differentiate between fresh mussels, shrimp, oysters, lobsters, and those that have been frozen for days.

Since some of the retailers sell prepared food, they need chefs who grill scampi, make clam chowder, and create tasty sauces that shoppers will want to buy. These chefs often have years of experience working with a variety of shellfish, oils, and exotic foods like eel. Some of them even have culinary degrees that show they know how to grill delicious dinner items for retail shoppers.

Customers often need help deciding which types of products they should include in their meals. They might also need serving suggestions for mussels, crab, and shrimp. The retail stores therefore hire clerks who provide excellent customer service. Those who can share recipes and help customers pick out the freshest items often improve sales and encourage shoppers to return to the market again and again.
