Glucose: A commercial sugar used in candies. It is used due to the fact that it generally doesn't crystallize.

Gum Arabic: A powdered resin derived from the Acacia tree. It acts as a food stabilizer and is an ingredient in gum drops and commercial marshmallows.

Invert Sugar: A sugar solution made by melting sugar with an acid; usually lemon juice or cream of tartar. This process breaks the sugar down into two components, glucose and sucrose, and is used in syrups and jams because it doesn't crystallize.

Invertase: A yeast derivative used to make soft centers creamier.

Lecithin: An emulsifier made from soybeans. It prevents fats from separating from other ingredients.

Nougat: A blend of caramelized sugar and ground nuts; usually almonds. It is often coated with chocolate and forms the base for many candy bars.
